- 2 Fresh Salmon Filletsskin left on
- 6tbsp olive oilgood quality oil
- 2small Shallotsthinly sliced
- 1 tomatodiced
- ¾cup Frozen Peas
- 1tbsp Fresh Thymeremoved from the stem
- ½cup Fresh Mint Leavescoarsely chopped
- 1 Lemonzested and juiced
