Easy Baked Dessert with Apple, Fig, and Goat Cheese

This dessert recipe comes from the Moulin du Calanquet outside St Remy de Provence in the Alpilles. It combines tart green apples, goat cheese, and sweet figs for a delicious (and easy) dessert.

The Calanquet oil mill was inaugurated on February 8, 2001, and named after the lovely site on which it was built. Moulin de Calanquet is four kilometres from the centre of Saint-Rémy, on the old Roman road. Calanquet originates from the word “calan,” meaning a rock that provides shelter from the Mistral wind.

Alpilles Olive Producers

The Alpilles are a small mountain range running east to west for 25 kilometres, starting at the edge of the Durance River and the town of Orgon, to the far end near Fontvieille. Although the Alpilles do not boast significant altitude, the maximum height is 498 metres. They are dramatic. However, the rugged limestone peaks make these hills appear much higher than the numbers suggest. Try hiking in the area, and you will be thankful there isn’t any more vertical to climb.

If you like olives, wine, and beautiful vistas, a driving or cycling tour around the Alpilles villages is a “must-do” while in Provence. Olives grow throughout the Mediterranean basin, where the climate is suitable. The olive tree is fairly drought-resistant; many live for centuries, but productivity diminishes. It’s unclear whether the Phoenicians or the Romans introduced olive trees and the olive oil trade in the region known as Provence today. Either way, the olive tree has been a part of the landscape in the South of France for at least two millennia.

A straightforward, quick and original recipe, combining sweet and sour with the crunch of apples.

Ingredients
  

  • 6 Cabécou goat cheese (https://en.wikipedia.org/wiki/Cab%C3%A9cou)
  • 1 Granny Smith apple It's essential to use this variety because of its acidity.
  • 6 tsp fig-spice jam
  • olive oil Assemblage variety
  • 6 slices bread Use sandwich-style bread
  • 100 mL balsamic cream to decorate your plates

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Spread your slices of sandwich bread and cut them into 6 rounds using a cookie cutter, or keep your slices of sandwich bread square.
  • Wash your green apple and cut 6 whole slices. Remove the seeds. Place the apple slices on the slices of sandwich bread, add a teaspoon of fig-spice bread jam, and add your Cabécou. Drizzle the Assemblage olive oil over the toast and bake for 3 minutes.
  • Immediately place your hot toast on a plate, drizzle with balsamic vinegar, and serve with a small rocket salad!

Moulin du Calanquet products include fig-spice jam, the Assemblage variety of olive oil, and balsamic vinegar cream.
