Apricots: Summer Stonefruit

Apricots are stonefruit (Latin: Prunus sect. Armeniaca) related to plums. The fruit grows on a small tree, about the same size as an olive tree, and if you are walking in the Provencal countryside, you may be lucky enough to come across one in the wild. While it’s not unusual to see apricot trees growing in the wild in the Alpilles and parts of Provence, many commercial growers exist. In addition, the hot, dry Mediterranean climate suits the apricot, which is why the fruit grows in many countries around the region and the Middle East.

In Les Baux de Provence, Elsa Lenthal has reignited the age-old art of “fuseaux de lavandes” (lavender wands). Perhaps because replicating an old-fashioned fuseau de lavande is time-consuming and painstaking, lavender sachets came into vogue. Filled with dried lavender blossoms or seeds, these inexpensive, colourful sachets are found in every market and are a favourite souvenir of the region. However, creating an authentic and artisanal fuseau de lavande is a work of art. It is done by hand and can only be made with fresh lavender.

Roasted Apricots with Lavender

Lavender Roasted Apricots with Almonds

Whether served as dessert (or breakfast), this delicious blend of tender fruit, fragrant lavender, and crunchy toasted almonds will transport you to the Provençal countryside.

Servings 4 servings

Ingredients
  

  • 8 apricots ripe
  • 2 tbsp honey
  • 1 tbsp dried lavender flowers
  • 1 tbsp butter melted
  • 1 tsp pure vanilla extract
  • a few springs fresh lavender flowers for garnish, optional

Instructions
 

  • Preheat your oven to 180°C (gas mark 6).
  • Wash the apricots, cut them in half and remove the stones. Place apricot halves in an ovenproof dish, cut side up.
  • Combine the honey, melted butter and vanilla extract in a small bowl. Add the dried lavender flowers and mix well.
  • Spoon the honey-lavender mixture over each apricot half. Place in the oven and bake for 15-20 minutes, until the apricots are tender and lightly caramelized.
  • Remove from the oven and allow to cool slightly.
  • Serve the roasted apricots warm or at room temperature, garnished with a few sprigs of fresh lavender for decoration if you like.
  • Accompany these roasted apricots with a scoop of vanilla ice cream or a dollop of crème fraîche for an even more delicious dessert.

Notes

Add a few toasted flaked almonds before serving for a touch of crunch.
For a refined breakfast or brunch, serve them on a bed of Greek yogurt and sprinkle them with granola.
