Fried Beef Lettuce Cups à la Provençal with Zucchini

With a slight Asian influence, the stir-fried Provençal beef and zucchini (courgette) are served on a bed of little gem lettuce (baby romaine). This light starter works well as an appetizer or a tapas style menu.

Provençal Fried Beef with Courgette on Little Gem Salad
Easy and quick, this appetizer takes a bit of Provencal liberty with Asian-style lettuce cups. Little Gem Lettuce is a perfect "holder" for the beef and courgette mixture, but if you cannot find these baby Romaine will work too.

Ingredients
- 2 zucchinis (courgettes) washed and chopped
- a few sprigs of thyme
- sea salt
- 1-2 Little Gem Lettuces Baby Romaine
- 150 g Beef Mince Meat
Instructions
- Fry off the meat in a hot pan with some olive oil. Add the courgettes and fry for another couple of minutes. Season to taste and add some thyme leaves. Wash the little gem lettuce leaves and pat to dry. Add some mixture of the meat and courgette mixture to each leaf. Decorate the leaves on a wooden board or rustic plate.
