There is a time of day in Aix-en-Provence when shutters crack open, the lift softens, and the air is filled with the scent of warm stone and fresh herbs. It is that exact moment, as the city awakes, that an authentic Provençal cooking experience begins. It doesn’t start in the kitchen, but in the historic heart of Provence, where culinary tradition becomes the daily ritual of local life.

A Morning Welcome in the Old Town

Guests are first welcomed into Chef Clément’s intimate cooking class, offered in your holiday rental kitchen or in a workshop kitchen, tucked within the sunlit streets of the old town, giving the feel that you are stepping into the home of a good friend, a passionate chef who has spent years perfecting his craft and hospitality. Everything invites curiosity from the copper pots glinting in the sunlight to bowls of freshly cut herbs and lemons.

The morning unfolds slowly, blending with the Provençal rhythm. You walk with your private chef through picturesque streets, heading to a local market, where the real cooking story begins.

A Market Experience: The Soul of Provençal Cooking

A Provençal market is what draws you into the region’s history and culture. You make your way through the vibrant stalls at an unhurried pace, while Chef Clément brings the city’s culinary heritage to life. He stops, chatting to vegetable growers, greeting them by name, introducing you to the fishmonger who has served the area for generations, while explaining why certain ingredients are only available at certain times of the year. With his expert guidance, seasonal produce offers a unique understanding of Provence rather than just a shopping list.

The market offers a small sensory moment as a producer offers you a slice of sun-ripened melon and a spoonful of tapenade, each woven with stories. You learn the evolution of the market, the traditions behind the recipes, and the flavours that define authentic Provençal cuisine.

Before heading back to the kitchen, you stop at a local bakery and choose a fresh, fragrant, warm loaf to include in your meal.

A Private, Hands-On Culinary Workshop

Returning from the local market, guests step back into the kitchen with baskets brimming with fresh produce and an excitement about the next step in the class. What really sets this experience apart from other cooking classes is that it is private and customizable. Every group gets to choose from a list of seasonal suggestions, ensuring your cooking class reflects your tastes, interests, and culinary curiosity.

For the next three and a half hours, you cook under Chef Clément’s attentive guidance. He is not the kind of instructor who stands behind a counter; he moves through the kitchen with calm assurance, showing you professional techniques that feel relatively simple, even to beginner cooks. You learn knife skills, emulsions, reductions, delicate preparations, and confits, with every step being explained and applied in real time.

It creates a focused, yet joyful atmosphere, where laughter is mixed with the sound of simmering sauces. Chef Clément encourages guests to trust their senses, such as how onions should smell when perfectly softened, and how lavender-infused cream thickens.

Part of this depth is from Chef Clément’s experience. He has been teaching since 2012, having worked extensively with French and International guests, shaping a style of cooking that is generous, patient, and instinctively attuned to different learning styles. He is passionate about the quality of ingredients and has recently taken over a one-thousand-tree olive grove, where he crafts his own premium olive oil, L’Huile des Remparts. This olive oil is used throughout the kitchen, elevating simple dishes with notes of green fruit, almonds, and Provençal garrigue.

A Meal Shared: The Provençal Tradition

Once your group has completed the dishes, the kitchen is transformed. Counters are cleaned, pans set aside, and the table is beautifully laid, inviting you to linger and enjoy conversation.

Here you savour the meal you prepared with each course served by the Chef himself. This moment is not rushed, as you tear and share the bread you purchased, enjoy a glass of local wine, and the table becomes a place of connection between the Chef and the guests.

More Than a Class: An Experience Rooted in Tradition

What makes this Provençal cooking experience remarkable isn’t the recipes or techniques, but the human connection at its core. Chef Clément is not a performer. He shares his passion for Provence, his knowledge, and craft with his guests. These cooking experiences feel as though you are spending the day with a local friend who has invited you into his world.

When you leave, you don’t just take recipe cards with you; you leave with the confidence to recreate each dish at home. The kitchen where the cooking class takes place is equipped with home-style kitchen tools, helping you understand the process, techniques, and ingredients.

The relationship doesn’t end at the end of the class. Once guests return home, Chef Clément remains available to answer questions, provide guidance, and assist with troubleshooting. He continues to teach, extending the spirit of Provence beyond the local kitchen.

A Taste of Provence That Lasts

Provence is known for its lavender fields, rosé wines, and hilltop villages, and it can be easy for cooking experiences to feel curated. When you step into this cooking class, you step into an authentic experience rooted in tradition, yet personal.
