Apricot Cake a Delicious Reason to Celebrate Summer Fruit – Gâteau d’Abricots
Cakes & Cookies · Dessert · TasteThis apricot cake is like a sweet toast to the summer. You can use ripe apricots (my favourite), although the recipe works just as well with peaches. The red currents are optional, but they do add a subtle flavour and texture. However, the best part about this cake is how easy it is to make – one mixing bowl, a short time in the oven and voila!
The gâteau d’abricots recipe follows (below) in both French and English.

Notes
*Ou des pêches et des groseilles (or use peaches and red currants)
** Ou d’Amande (or use Almond Cream) it is a good substitute (to oat cream) as well, or regular cream if you do not have any dairy allergies.
Oat and almond cream can be found in normal French supermarkets there is no need to go to an organic store. These creams are usually found close to the soy, almond and oat milks. I am lactose-free, so this recipe is suitable for anyone with dairy sensitivities.
