Aux Envies in St-Rémy a Restaurant with an All-star Team

There’s a new restaurant in town, and it’s a winner.

Aux Envies opened in the spring and has hit the ground running. It is situated on a small square in the center of St-Rémy-de-Provence, and its outdoor terrace, shaded by trees, is an inviting place to dine on a warm summer evening.

An Experienced Team

The team running it is young and energetic, with experience in several top local establishments. The chef was the second-in-command at the Michelin-starred restaurant l’Aupiho at Domaine de Manville, service is led by the former manager of Manville’s bistro, and the former sommelier at the well-respected Vallon de Valrugues leads the wine program.

Their goal was to create a restaurant that is “chaleureux, bon, authentic” (welcoming, good, authentic), and they have certainly succeeded. The servers are friendly and attentive, and everything my wife and I ordered at a recent dinner was excellent.

A Focus on Quality

The restaurant’s menu is not extensive, which allows a focus on quality, and there is a wide selection of wines both by the glass and by the bottle. There is also a special menu of small bites for those who want to have something to nibble on with their aperitif, with choices like focaccia with tapenade and meatballs with pesto.

Everything is homemade, which makes Aux Envies a good choice for those with food intolerances because the chef knows exactly what is in each dish. I’m gluten-free, but I was able to eat safely with the guidance of my helpful server.

Aux Envies sources extensively from local suppliers, which means the ingredients are always fresh. The chef updates the menu monthly to take advantage of the latest produce arriving in local markets, but there are a few house specialties.

The fish carpaccio is always on the menu, prepared differently each month, and don’t pass up their delicious pork dish. As for dessert, the chocolate mousse with caramel beurre sale (salty butter) and a hint of olive oil is not to be missed!

Keith Van Sickle
