Grilled Red Peppers with Garlic

A quick side dish using seasonal peppers that is great for a picnic. Serve at room temperature.

Ingredients
  

  • 5 red peppers
  • olive oil for preservation
  • salt and pepper to taste
  • 1-2 garlic cloves
  • 1/4 bunch flat-leaf (Italian) parsley washed and finely minced

Instructions
 

  • Preheat your oven to 400°F (200°C)
  • In a ceramic baking dish, place the red peppers and bake for about 1 hour until tender and the skin is blistered
  • Remove the peppers from the oven and let them cool off
  • Detach the flesh from the skin, remove and discard the seeds and the stalk
  • Chop finely ¼ bunch of parsley and crush the garlic cloves separately
  • In a serving dish, layer the red peppers with parsley, garlic, olive oil, salt, and pepper. Repeat several times.
  • Keep the dish in fridge until you are ready to serve.

Notes

Note: Olive oil should approximately cover half of the red pepper layers height.
