Grilled Red Peppers with Garlic

A quick side dish using seasonal peppers that is great for a picnic. Serve at room temperature.

Ingredients

red peppers
olive oil
for preservation
salt and pepper
to taste
1-2
garlic cloves
1/4
bunch
flat-leaf (Italian) parsley
washed and finely minced
Instructions
Preheat your oven to 400°F (200°C)
In a ceramic baking dish, place the red peppers and bake for about 1 hour until tender and the skin is blistered
Remove the peppers from the oven and let them cool off
Detach the flesh from the skin, remove and discard the seeds and the stalk
Chop finely ¼ bunch of parsley and crush the garlic cloves separately
In a serving dish, layer the red peppers with parsley, garlic, olive oil, salt, and pepper. Repeat several times.
Keep the dish in fridge until you are ready to serve.
Notes
Note: Olive oil should approximately cover half of the red pepper layers height.
