Focaccia is an oven-baked flatbread seasoned with herbs to create a hearty, flavourful bread. Focaccia makes a perfect addition to any meal or enjoyed on its own with some oil and balsamic vinegar. Enjoy this simple recipe and make it your own by adding meat, cheese, or any vegetable of your choice!

- 2 cups Water
- 1 oz Fresh Yeast
- 2 oz Olive Oil
- 1 1/2 lbs All-Purpose Flour
- 1 oz Salt
Whisk salt and flour together.
In the bowl of a stand-up mixer fitted with the paddle attachment, mix water and yeast at low speed to combine.
Add oil, herbs, and about 1/3 of the flour salt mix. Let absorb, then gradually add the rest of the flour and salt.
After all the dry ingredients are incorporated switch to a dough hook and keep mixing for about 5 minutes. The dough will be sticky and elastic.
Prepare a tray lined with well-oiled parchment paper. Pour out the dough onto the paper, spread it with oily hands to fit the tray, make sure the surface is oily and cover loosely with plastic film.
At this point, you can add whatever you like. Chunks of bacon, cherry tomatoes with herbs, mozzarella, olives, anything that makes you happy!
Let rise in a warm spot until doubled in volume and spongy, about 45 minutes.
Bake in a preheated oven at 225ºC/430ºF and bake until golden, about 20 minutes.
