washed and hulled

Icing sugar

large sprig
mint
the leaves only

small glass of
Muscat
water and ice
optional to taste
Instructions
Put the first four ingredients into a blender and blitz until smooth.
Add a few cubes of ice and water to loosen, blend again.
Taste, depending on the ripeness and variety of strawberries chosen, you may need to add more sugar.
The resulting soup should be sweet but not cloying, with a hint of mint and Muscat.
Chill and serve in teacups or shot glasses.
Notes
This recipe is easy to double or even triple. I have given quantities enough for eight shot glasses, but you might want to have a larger portion!
