Strawberry Soup - Soup de Fraises

A tasty seasonal dessert best served with a glass of wine!

Ingredients
 
 

  • 8 oz Strawberries washed and hulled
  • 2 tbsp Icing sugar
  • 1 large sprig of Mint, the leaves only
  • 1 small glass of Muscat
  • Water and ice optional to taste

Instructions
 

  • Put the first four ingredients into a blender and blitz until smooth.
  • Add a few cubes of ice and water to loosen, blend again.
  • Taste, depending on the ripeness and variety of strawberries chosen, you may need to add more sugar.
  • The resulting soup should be sweet but not cloying, with a hint of mint and Muscat.
  • Chill and serve in teacups or shot glasses.

Notes

This recipe is easy to double or even triple. I have given quantities enough for eight shot glasses, but you might want to have a larger portion!
