Grilled Red Peppers with Garlic

Ingredients
  

  • 5 Red Peppers
  • olive oil for preservation
  • Salt and Pepper to taste
  • 1-2 Garlic Cloves
  • 1/4 Bunch Italian parsley washed and finely minced

Instructions
 

  • Preheat your oven to 375F (200c°)
  • In a baking dish, place the red peppers and bake for about 1 hour until tender and the skin is blistered
  • Remove the peppers from the oven and let them cool off
  • Detach the flesh from the skin, remove and discard the seeds and the stalk
  • Chop finely ¼ bunch of parsley and crush the garlic cloves separately
  • In a serving dish layer the red peppers with a bit of parsley, garlic, olive oil and salt and pepper. Repeat several times.
  • Keep the dish in fridge until you are ready to serve.

Notes

Note: Olive oil should approximately cover half of the red pepper layers height.
