Grilled Red Peppers with Garlic
Salt and Pepper
washed and finely minced
Preheat your oven to 375F (200c°)
In a baking dish, place the red peppers and bake for about 1 hour until tender and the skin is blistered
Remove the peppers from the oven and let them cool off
Detach the flesh from the skin, remove and discard the seeds and the stalk
Chop finely ¼ bunch of parsley and crush the garlic cloves separately
In a serving dish layer the red peppers with a bit of parsley, garlic, olive oil and salt and pepper. Repeat several times.
Keep the dish in fridge until you are ready to serve.
Note: Olive oil should approximately cover half of the red pepper layers height.
